Charley’s Steak House history.....created a unique dining experience unsurpassed in the industry. The restaurant’s namesake, Charley Woodsby, co-founder of the Red Lobster chain, was honored by the Florida Restaurant & Lodging Association with the Lifetime Achievement Award in 2006. After selling Red Lobster to General Mills in 1970, Charley and his son Ron Woodsby developed Talk of the Town Restaurants - the corporate parent to Charley’s Steakhouse. Over the years the Woodsby’s became “beef aficionados” with a steadfast formula for success: feature only Midwest grain-fed USDA Prime & Choice beef, age on-site for 4 to 6 weeks, and have management cut meat daily and season for 30 hours to create distinctive flavor. The steak is then flame-grilled over a 1200-degree open pit, fueled with a combination of oak & Florida citrus wood. This carefully monitored process provides for quality, tenderness and a tantalizing taste that elevates Charley’s to the ultimate steakhouse experience!
Since it’s inception, Charley’s Steak House has prided itself on being a traditional steakhouse. But with the rise in number of savvy diners came the need to evolve the definition of ‘steakhouse’. Instituting a corporate chef and placing managing chefs at each location, Charley’s has advanced into a traditional steakhouse with culinary flair featuring chef-driven appetizers and entrees as well as established menu items.

History of The Melting Pot
Fondue is a fun and interactive dining experience – for more than three decades, The Melting Pot has defined the niche across the American dining scene. The first Melting Pot opened in April of 1975 in Maitland, Fla. – just outside of Orlando. It was a cozy, quaint location and its first menu consisted of just three items: Swiss cheese fondue, beef fondue and a chocolate fondue dessert. As the restaurant’s popularity expanded, so did its menu and ambiance. Mark Johnston, who was working his way through college as a waiter at The Melting Pot and noticed the popularity boost. With the help of his brothers Mike and Bob they scraped together funding to open The Melting Pot of Tallahassee in 1979 with the blessing of the original owner in Maitland . The Tallahassee location grew enormously popular, and within one year its success paved the way for future franchise expansion. In 1980, the Johnston brothers decided to branch out and opened their second location in Tampa. As their business grew, the brothers began to consider franchising even more stores in order to expand. Then in 1985 Mark, Mike and Bob Johnston purchased all rights to The Melting Pot brand and established The Melting Pot Restaurants Inc. – the new franchise company. After a year of research and reorganization, The Melting Pot Restaurants Inc. began its franchise offering. From the start, the Johnstons were diligent in their search for energetic entrepreneurs who were as excited as they were about the concept and its potential. And their commitment to building a close fondue family proved successful. Today, with more than 100 locations across 33 states and with more than 30 locations under development, The Melting Pot Restaurants Inc. is the country’s premier fondue restaurant franchise. At The Melting Pot, fondue truly becomes a memorable four-course dining experience where patrons can dip into something different – and discover all the ingredients for a unique dining experience including a relaxed atmosphere, private tables, attentive service, fine wines and signature fondue dinners.

At Charley's Steak House I found out- All of their steaks are selected from only the best three-year-old grain-fed steer, graded USDA Prime and Choice. After starting with the finest beef, they age the loins for a minimum of four to five weeks for tenderness and flavor. When the time is right, they cut the loins into steaks and trim away most of the excess fat, leaving only enough for flavor. Then they prepare the steaks and flame broil them on our custom-built, natural wood-burning pit.
Their specially built pit and flame-broiling secret date back to Florida's own Seminole Indians, whereby meats, poultry and seafood were cooked over easily accessible hardwoods. Three carefully chosen hardwoods are combined in our custom pit, producing a clean, aromatic 1,100 degree fire which leaves no petroleum or charcoal aftertaste. Their unique cooking method quickly sears the meat and seals in the natural steak juices, protecting and preserving the flavor of our perfectly aged steaks. This isn't the steak you buy at your local grocery, or find at ordinary restaurants.
A lot of people have asked, "Is it worth it?" They feel that all the aging, hand-cutting, seasoning and open-flame cooking to bring you the best steak in Orlando is well worth the extra effort. See if you don't agree that at Charley's Steak House, "They've Got Great Steaks!"
